In honour of the sunny weather we’ve been enjoying here in Sheffield (and a bowl of leftover boiled potatoes staring me down from the fridge), I thought I’d share a light, refreshing recipe you can throw together in minutes.
This leftover potato salad is incredibly easy to make, and the ingredients are as flexible as your mood. No cooking required! It’s a great little side dish, or even a meal on its own—perfect for those no-fuss lunches or lazy evening nibbles.
Ingredients (Serves 2):
- About 4 leftover boiled potatoes, chopped to your preferred size
- 2 handfuls of chopped iceberg lettuce (or any leafy greens you love)
- 3 large tomatoes, chopped
- Salt and pepper to taste
- Your favourite salad dressing — or try my Father’s famous salad dressing for something special
