Leftover Potato Salad – A Quick Recipe for Lazy Days

Wondering what to do with those leftover boiled potatoes? This super simple, satisfying salad is light, fresh, and customisable. The perfect bite for warm weather days.
Leftover boiled potato salad

In honour of the sunny weather we’ve been enjoying here in Sheffield (and a bowl of leftover boiled potatoes staring me down from the fridge), I thought I’d share a light, refreshing recipe you can throw together in minutes.

This leftover potato salad is incredibly easy to make, and the ingredients are as flexible as your mood. No cooking required! It’s a great little side dish, or even a meal on its own—perfect for those no-fuss lunches or lazy evening nibbles.

Ingredients (Serves 2):

  • About 4 leftover boiled potatoes, chopped to your preferred size
  • 2 handfuls of chopped iceberg lettuce (or any leafy greens you love)
  • 3 large tomatoes, chopped
  • Salt and pepper to taste
  • Your favourite salad dressing — or try my Father’s famous salad dressing for something special

Whether you’re clearing out the fridge or craving something light and fresh, this is a delicious way to turn humble leftovers into a satisfying, sunshiney bite.

Bon Appétit! 🥗
